Life in the day of a Head Chef

This is Paul Sim, head chef extraordinaire of Eat Fish Berkhamsted. Here is a little run down of what goes on in my day!

8.45 Arrive at work
9.00 See extraction fan company off after they cleaned it all out.
10.00 Phone calls, phone calls, phone calls...
12.00 Service!
2.30 End of Service, good Lunch had about 30 people in, everybody loved it! Very happy!
3.00 Boss asks for menus to be made up for party of 20 coming for a special do
3.10 Bosses ask for a sit down meeting to discuss action plans and find out where everything is going. Paul still not finished with menus - need to email before 5...
5.00 Meeting finished and finish the menus, sent, good!
5.20 Getting ready for evening service, realise the kitchen is awfully hot... Don't know why?
5.30 Realise extraction guys put the fan in the wrong way air is blowing into the kitchen not out...
6.00 Luckily got hold of extraction company, they they walk us through a rewiring procedure...
7.00 Boss in roof rewiring... All done, extraction on... All working! Thank the heavens!
10.00 Service ends, good again, everybody loved it, customer even bought us a beer.
11.30 Home, eat, sleep!
